Why does a video clip on a hike look lower quality than the Camera app?
Record a clip on a hike, then open the Camera app back at the car and film the same view, and the two files can look different — the hike clip a little softer, a little more compressed. It's tempting to read that as something going wrong. It's really a phone splitting a limited amount of headroom two different ways, because the two situations are asking for very different things from it at the same time.
The short answer
A video clip pinned to a hike is recorded by an app that is also tracking GPS position continuously, often for hours, on a battery and a processor that both have to last the whole walk. The Camera app has no such second job — when it's open, filming is the only thing the phone is doing, so it can spend everything it has on the picture. A hiking app deliberately doesn't spend that much on a clip, because the clip has to share the phone with a job that isn't allowed to stop.
What running in the background actually costs
Recording a GPS track means reading a location fix at regular intervals, working out distance and pace from it, and writing all of that to storage for as long as the hike lasts — sometimes several hours. Encoding video at a higher resolution or bitrate takes a meaningfully larger share of the processor and a meaningfully larger share of the battery for however long the clip runs. Ask for the top resolution the phone is capable of while that GPS session is also running, and the two jobs start competing for the same limited chip and the same limited battery, at a moment when the GPS session is the one job that has to keep going regardless.
Why the Camera app doesn't face this trade-off
Open the Camera app on its own and there is nothing else the phone needs to keep running underneath it — no continuous location fix, no ongoing calculation, nothing that has to survive for hours after the recording stops. It can commit the phone's full processing budget to one clip for the however-many seconds it takes to shoot it, then hand that budget straight back. A hiking app never gets to make that trade for even a moment, because the track it's protecting is still running the entire time a clip is being captured.
